Let me start by saying that I am writing this after just having watched True Grit in the theater.  It’s the 50th anniversary of my favorite John Wayne movie so it was released back into theaters for a few shows.  And although I have watched it at least a hundred times, I have never seen it in the theater, so I had to go.  My brother and his girlfriend were happy to go with me, and along with about twenty other fans who also showed up, we all enjoyed it.  Maybe we’ll do it again for the 75th!   

Now I will get on with my recipe for this week.  With the weather finally starting to get a little warmer, this week’s recipe is the perfect treat for upcoming picnics or gatherings.  It only has five ingredients and I like all of them, so I don’t see how this could not be a success, at least for me.  So, it’s time to get started on Donovan’s Key Lime Pie.  

I am going to make this recipe exactly like it says, but I am going to double it so I have more pie for people to taste and review.  I begin by adding a couple packages of cream cheese to my mixer bowl and beating the cheese until it is smooth and creamy.  I add sweetened condensed milk and egg yolks, then beat until fully mixed with the cheese.  Next, I add some lime juice and continue beating until everything looks nicely combined.  I then pour the mixture into 2 pre-made graham cracker crusts and smooth the tops with a spatula.  I place the pies on a baking sheet and put them into a 350 degree oven.  I take them out when the pie filling starts to look set, which is about 11 minutes later.   Now I just have to let them cool, then refrigerate them for at least 2 hours before serving.

The pies have now been refrigerated for about 12 hours and it is time to get some reviews from some of my co-workers.  Let’s hear what they have to say.

I have to say I agree with all of them, along with some other co-workers who tasted the pie and liked it, but just didn’t want to be recorded.  Everyone really seems to like this pie and I think it may be my favorite recipe so far.   

Now…what should I make next?

1 (14-oz.) can sweetened condensed milk
3 egg yolks
½ cup fresh key lime or lime juice
1 pre-made graham cracker crust
